  1. Soak sabudana for 5 to 6 hours or overnight in water just above the surface of sabudana.
  2. Drain the water after soaking. Sabudana would have fluffed up and must be soft when squished.
  3. Wash the potatoes nicely. Steam it. Remove the skin and mash the boiled potatoes.
  4. Roast the peanuts. In a chopper, add the roasted peanuts, ginger, chillies, coriander leaves and cumin seeds.
  5. In a large mixing bowl, add sabudana, mashed potatoes, chopped ingredients, salt and lemon juice. Mix everything together.
  6. Now using your hand, form flat patties or vadas.
  7. In a cooking pan, heat oil to medium heat. Drop the vadas one by one so that they become dark golden brown on the outside and cooked inside.
  8. It takes about 5 to 7 minutes for one batch of 4 vadas.
  9. Drain them on absorbent paper and Serve hot with coriander pudina chutney.
