- Poach whole white fish 2 minutes, filets come right out of skin and bones, cut in bite size pieces, marinade an hour in 1/2 cup vinegar, 1/2 cup water, 1/2 cup sugar. Makes four cups.
- Wash, cut potatoes in bite size pieces. Very important: start potato pieces in cold water, bring to boil, boil 8 to 10 minutes, so all sizes and kinds are soft. Drain. Mix with bite size cucumber, apple, diced onions and avocado. Add herbs, spices, cured fish, shredded ginger. Mix with home made mayonaise, tomato paste and chopped parsley. Decorate with 3 boiled eggs and butter lettuce. Serve cold. Enjoy.
